YOU TIAO
You Tiao (油条 in Chinese , also known as Yu Char Kway , You Char Kway , Yau Ja Gwai , 油炸鬼 in Hokkien), or "Fried Dough Stick" is not really a local cuisine but is a common breakfast item for Singaporeans and is served with many Chinese dishes . In Hokkien the name means oil fried pastry and in Cantonese means oil fried ghost .
As the names says, the hawker would knead the dough into two sticks. The dough sticks are stick together at the longer side and then put into hot oil to fry. The end product would look like the number 11 , when you look at it from the side, it would look like the figure 8 and are lightly salted
You Tiao can be taken on its own but because of its absorbent nature (similar to a sponge) Singaporeans will usually have it as an accompaniment for other dishes , with Chinese Porridge, Kopi-O (black coffee), Dao Suan, Bak Ku Teh and many other dishes .
