TAHU GORENG
Tahu (or Tauhu) Goreng , a Malay dish of Indonesian origins , is a simple vegetarian dish of fried tofu in a spicy peanut sauce (Tauhu is tofu and Goreng is fried in Malay) usually served for lunch .
When preparing the dish, cakes of hard tofu are deep fried until golden brown then cut diagonally in half and arranged on a plate garnished with bean sprouts, cucumber and spring onion. A thick sauce is prepared with peanuts, shallots, garlic, chillies, balacan(shrimp paste), soy sauce and tamarind juice. The key to a good Tahu Goreng is the tahu itself or the beancurd. It has to be fresh, clean tasting, creamy and salty. Deep fried, it develops a crispy outer crust with a creamy inside. The sauce needs to be balanced, sweet, salty, spicy and sour.
