SAMBAL SOTONG
Sambal Sotong is a seafood Malay dish in which squid (sotong in Malay) are cooked in a sambal-based sauce, made with chilies, shallots, garlic, stewed tomatoes, tamarind paste and belacan. It is one of the most popular ways to cook squid and a dish always found in Nasi Padang .
The meat is usually cut in rings of 2 cm and fried for a short time (if overcooked m becomes rubbery) in the spicy sauce . Belacan gives depth and special flavor to the sauce and intensify the taste of seafood . Best described as all natural flavor enhancer, belacan is what gives many of the foods from Southeast Asia that authentic flavor and zest!
The dish can also be cooked with prawns in which case is called Sambal Udang .
