MUTTON SOUP
Mutton Soup is a Hainanese dish where mutton is double-boiled with Chinese herbs to give a thick broth with a strong mutton flavour without the gaminess, which is masked by the flavours of the herbs. The pieces of mutton meat are pre-cooked with ginger and chinese herbs. Some places you may choose either the leg portions, innards or the penis. This dish is served with steamed white rice. One version of this soup is clear, while another is thick and dark due to the addition of more soya sauce.
