MEE SIAM
Mee Siam is another Peranakan dish of noodles in a spicy gravy , basically Bee Hoon (thin rice noodles) served in a spicy , tangy sweet-sour gravy. The name show the influence , Siam beeing the former name of Thailand although Thailand has no such dish .It is a Nyonya speciality that is now prepared by Indians, Malays as well as Chinese stalls . The Bee Hoon is blanched before it is fried with chilli paste and ground dried shrimps, giving it a light reddish tinge. The gravy is prepared separately, mainly from tamarind (which gives the sour taste), dried shrimp, bean paste and a little bit of sugar (which gives the sweet taste). A generous amount of the gravy is poured over the prepared noodles and garnished with a hard-boiled egg, diced deep fried beancurd and green onion . Fresh lime is also squeezed at the end to give it a slight sour taste and don't forget the sambal .
