MEE REBUS
Mee Rebus is a Malay dish of Indonesian origins (literally means boiled noodles) of yellow noodles in a thick gravy . Thick yellow noodles (hokkien mee) and bean sprouts are blanched in boiling water to soften them, then placed in a serving bowl. Diced pieces of deep fried beancurd (tau pok in Chinese) are sprinkled on the top before a thick gravy, made with curry powder, spices,potatoes , dried shrimp and pounded peanuts, is spooned generously over it. The dish is served with a hard-boiled egg, fried onions, green chillies and a dash of dark soya sauce and lime juice.
A good specimen of the gravy is one that is not too viscous and should ignite your tastebuds with a refreshing blend of sour, sweet, salty and chilli hot flavours all in one go. The peanuts in the gravy should not be whole but should also not have disintegrated so that they provide a grit feel and added crunch. The best vendors would ensure the noodles are just right to absorb the flavour of the gravy, and not remain tasteless or worse, rubbery.
