IKAN BAKAR
Ikan Bakar is a Malay dish and its name is (almost) self-explanatory: bakar means burn while ikan means fish so this is barbecued fish .There are many types that can be used and the fish is typically kept whole, seasoned, wrapped in banana leaves and grilled over hot charcoals. It can be marinated in spices , sambal belacan , coconut milk , then grilled until it is crispy on the outside yet soft and tender on the inside. It is usually served with sambal sauce or soya sauce .
A variation of this is Sotong Bakar in which marinated squid, grilled so that the meat is tender but the edges are slightly charred.
