FRIED BEE HOON
Fried Bee Hoon (星州炒米,in Chinese) is one of Singaporean favourite dinner time dishes and it is only found at zhi-cha stall (a mini restauranteur that is found in most coffeeshops).
Bee hoon are the thin rice noodles like vermicelli and the other ingredients usually are cabbage, bean sprouts, small prawns, char siew - barbequed pork, egg . Cabbages are first cut into strips around 2-3cm, the char siew is diced and small prawns are pre-cooked first. The bee hoon is first cooked in boiling water before it is brought over to the wok for stir frying. During the stir frying, soya sauce is added to give the bee hoon its flavour. The ingredients are added in during the stir fry process.
This Singaporean cuisine would taste nicer when you eat it hot and add lime juice to it because the lime juice accentuate the taste of the bee hoon but too much lime juice would spoil the original taste of the Fried Bee Hoon.
The best way to eat it is to have some bee hoon placed in your spoon first (after you have mixed the Fried Been Hoon with lime juice), and try to put other ingredients in as well, like cabbage, char siew, egg, bean sprouts into the spoon as well. Send the whole scoop into your mouth. The crunchy cabbage and bean sprouts, the 'sweet' char siew and the nice textured stir fried eggs give you an all-round chewing experience.
There is also a Vegetarian Bee Hoon . The bee hoon is fried first and put in a large container ,when an order is placed, other cooked ingredients are added to the bee hoon , ingredients like vegetarian char siew, vegetarian fish, vegetarian intestine, vegetarian duck, cabbage, slices of mushrooms and many other vegetarian substitutes .Vegetarian char siew and duck are made from flour, while vegetarian fish and intestine are made of green peas that are mashed and made into likeness.
For those who can take spicy food, you can also add chilli to it like most of the dishes, the chilli should enhance the taste of the bee hoon. A good plate of Fried Bee Hoon is one where there is not an overwhelming amount of gravy added to it, because it would make the bee hoon soggy. The char siew and duck should be slightly burnt to give out a nice aroma and the cabbage should not be overcooked, displaying a crisp light green color.
