CZE CHA
Cze Cha (also spelled zhi char, zhi cha, zi char, zi cha, cze char, tze char ; in Mandarin, 煮炒) translated literally from Hokkien/Teochew means "cook and fry" and in essence, it refers to a style of meal , some say home-style food typically cooked in woks . Basically, you get to pick and choose from an array of dishes to eat with rice or noodles. However, this is different from Economical Rice or Nasi Padang in that you cannot just point to what you want , the food will be cooked after you have placed your orders. Most of the outlets selling Cze Cha will have menus, some also have pictures. So, a Cze Char stall is an all-rounder Chinese food stall serving a wide variety of a la carte dishes usually with white steamed rice and soups. Usually it has the highest sales turnover of the eating outlet that it occupies and thus forms the anchor tenant and main draw of the eating place, typically a coffeeshop.
The Cze Cha stalls also usually offer a variety of dishes ranging from seafood, vegetables, meat, eggs to soups to complement the Cze Cha. The number of dishes associated with Cze Char cooking is very large but some of the common and most popular dishes that you will find at Cze Cha stalls are Prawn Paste Chicken, Hotplate Tofu, Sambal Kangkong, Prawn in Bean Curd Skin, Emperor Ribs, Sweet and Sour Pork, Sweet and Sour Fish, Steamed Fish or Fried Fish, as well as Sliced Fish with Vegetables or Sliced Beef with Vegetables . A typical dish in Cze Char is Coffee Pork Ribs, or Mongolian Pork Ribs, or even Butter Pork Ribs as well as crab dishes .
