CURRY PUFFS
Curry Puff is a Singaporean snack of Malay origin. Also known as epok-epok in Malay, a flaky pastry usually stuffed with curried chicken, cubed potatoes or sardines and a slice of hard-boiled egg. As the names says, the main ingredient is the thick curry that together with other ingredients like chicken , sardines or potatoes serve as a filling wrapped with dough. The dough with curry fillings are then deep fried till golden brown. The fillings are already pre-cooked before they are placed inside the dough.
A good Curry Puff is one where the crust is not too thick and it is crispy , the curry should not be too spicy and the potatoes should be well cooked as well.
They may also be categorized into hand-made or mass produced machine-made puffs , both variations are popular in Singapore . There are many versions with all kinds of new fillings and different types of dough . There is a version of the Curry Puff that uses Western puff pastry , which has a different taste and shape. Some Chinese stalls and bakeries in Singapore have started selling Chinese-style curry puff as well. The skin is usually thicker and it can be quite filling as well and most of the time, a quarter of an egg is added in to give more variety in taste.
