CHINESE PORRIDGE
Chinese Porridge (also known as Chok) is eaten by Singaporeans at anytime of the day, but frequently at breakfast.
The viscosity of the Chinese Porridge depends very much on the ethnicity of the hawkers. There is a wide variety of Chinese Porridge to choose from. You can choose one served with pork slices, shredded chicken, cuttlefish slice, fish slice and century eggs to name a few.
Once the order is taken, the hawker will scoop a serving of Chinese Porridge (which is cooked and warmed on one side), place it in a small pot for heating. If you ordered one with egg, the hawker would break a raw egg into the serving bowl. The main ingredients like pork slice, shredded chicken are added into the serving bowl as well. Once the porridge is hot enough for serving, it is poured into the serving bowl. The hawker would then top it with a bit of diced garlic, sesame see oil, chopped spring onion and You Tiao. To enjoy this dish you should use your spoon to stir the mixture well, especially when you order it with egg. Since the Chinese Porridge is very hot, once you have mixed well, use your spoon to scoop the top of the serving, blow at it to cool it further and send the tasy mixture into your mouth.You will be able to taste the egg, sesame seed oil and the Chinese Porridge inside your mouth giving you a silky feeling. Thus it is strongly recommended that you eat it with egg but be prepared to pay more for it.
